One of the South’s most delightfully quirky food celebrations (and the nation’s only pimento cheese festival) is held each spring in Cary, North Carolina.

The annual Pimento Cheese Festival fills Downtown Cary Park with all things pimento cheese, AKA “Carolina caviar.”

The humble spread is a staple in Southern cuisine, and this event highlights it in wildly creative ways.

Dozens of vendors serve inventive iterations of the dish, including pimento cheese frozen custard, hot fried chicken pimento cheese sandwiches, loaded pimento cheese fries, and pimento pupusas.

Of course, there’s a competitive element to the festival, too. Local restaurants vie to win the title of “best pimento cheese.” This year, Wendy’s Wicked Peppers & Pimento Cheese took home the crown.

Ash and Scott Mason of @thehivedrive went to the Pimento Cheese Festival for Amazing America, and Scott was actually asked to be a judge for the pimento cheese competition, meaning he was able to eat even more scrumptious pimento cheese. Score!

There’s also a pimento cheese sculpting competition for attendees to participate in, and artists create cheese sculptures for everyone to admire.

Enjoy live music, grab a drink from a local brewery, browse the marketplace, and soak up all the cheesy goodness.

Admission is totally free — guests just pay for food and drinks.
