JACKSON, MI – Mary Baldwin moved to the Jackson area when she was 16 years old and, just like many, Hinkley Bakery became a part of her life.
Whether people prefer a glazed doughnut or an apple fritter, almost everyone in Jackson, including Baldwin, has stood in line at Hinkley’s for their favorite treat. This experience is what led Baldwin to create her own small version of the 110-year-old bakery at 700 S. Blackstone St.
